Dr. Kim Williams is not merely endorsing the vegan diet but has tried and tested its benefits as well. In 2003, he was suffering from DLL cholesterol issues. The main reason Dr. Williams switched to a vegan diet is because DLL cholesterol is known to cause heart diseases. He even wrote an essay on the benefits of following a plant-based diet. As per his essay, a plant-based diet helps to lower cholesterol levels as well as promote cardiovascular health.

After switching to a plant-based diet, he got his blood tested on a regular basis. This was done to monitor the effects of a vegan diet on his DLL cholesterol levels. At the time he switched to a vegan diet, his DLL cholesterol levels were at an all-time high.

In most cases, the cholesterol levels spike due to excessive consumption of fried foods and red meat. However, Dr. Kim Williams was only consuming chicken and fish with no skin. But this change in diet did not help much since his cholesterol levels were still high. This is when he decided to eliminate cholesterol from his diet completely. He substituted out chicken and fish for veggie burgers and other soy-based products.

Only six weeks after the change in diet, his DLL cholesterol levels dropped down from 170 to 90. This is what compelled him to switch completely to a vegan diet. It is not every day that a renowned cardiologist endorses a vegan diet. However, Dr. Williams has tested the benefits of this diet on himself, and that is why he endorses it.
